COOKIE BUTTER PROTEIN BANANA BREAD

Dangerously addictive flavour combo alert! Think fragrant sweet banana bread laced with creamy cookie butter and topped with a toasted golden cookie butter granola crumble. Guys, this is honestly the best tasting banana bread variation I’ve created 🤤 You NEED to try it! 

Ever since my local supermarket (Woolworths) started stocking @lotusbiscoffuk Cookie butter, i’ve been obsessed with it so I’ve been finding ways to put it in absolutely everything, including this banana bread. 

Here is the recipe:

VEGAN COOKIE BUTTER PROTEIN BANANA BREAD 

INGREDIENTS:
Dry:
  • 2 cups self-raising flour
  • 1/4 cup vegan vanilla protein ( i used @macr0mike )
  • 1 tsp cinnamon 
  • 1/2 cup brown sugar 
WET:
  • 4 medium ripe bananas 
  • 1/4 cup coconut oil 
  • 1/2 cup cookie butter – reserve 1/4 cup for the swirl 
  • 1/2 cup rice milk (or other plant milk)
  • 1 tsp vanilla 
COOKIE BUTTER GRANOLA CRUMBLE TOPPING:
  • 1 cup your fave granola, preferably fruit-free 
  • 1/2 cup cookie butter 
  • 1/2 tsp cinnamon 
METHOD:
1.  Preheat the oven to 160 ℃/ 320 ℉, fanforced and line a loaf tin with non-stick paper.
2. Combine all the dry ingredients
3. In a blender, add all the wet ingredients, except for 1/4 cup of cookie butter and blend until smooth. Pour this wet mixture into the dry and use a spatula to gently fold until no flour remains. Do not overmix.
4. Transfer the batter to the prepared tin. Drop in the reserved cookie butter and drag your knife through the batter to form a swirl.
5. Make the cookie butter granola crumble: In a microwave safe bowl, melt the cookie butter for 20 seconds. Add in the granola and cinnamon and toss until all the granola is coated with cookie butter. Sprinkle the granola evenly crumble over the top of the banana bread batter.
6. Bake in the oven for 35-40 mins until the granola is golden and a knife inserted comes out clean. Allow the bread to fully cool before cutting
*Storage tips: in an airtight container at room temp for 2 days, in the fridge for up to 5 days or in the freezer for months
