Okay so this is honestly the EASIEST tasty oatmeal cookie you’ll ever make!
When it comes to oatmeal cookies, I’m a chocolate > raisin type of girl! But if you wanted to, you could even get creative with the mix ins and use nuts, berries, anything your heart desires really!
I’m also quite picky and to me a good cookie needs to be crispy on the edges and soft & chewy in the centre! I’m so happy with how these turned out!

**Storage tips: in an airtight container at room temp for 1 week
Ingredients
- Dry:
- ✅1 cup self-raising flour
- ✅1 cup oats
- ✅1/4 cup non-dairy chocolate chips
- *Optional: pinch of salt, other mix ins of choice e.g. nuts, fruits, candies
- Wet:
- ✅1/3 cup coconut oil, melted
- ✅2 tablespoons almond butter
- ✅2 tablesooons non-dairy milk (or water)
- ✅1 cup sugar (I used 70% brown, 30% white)
- *optional: 1 tsp vanilla extract
Instructions
- 1. Preheat the oven to 180 degrees Celsius, fan-forced. Line a baking tray with non-stick paper.
- 2. In a large bowl, whisk together all the wet ingredients until the sugars have dissolved
- 3. In another bowl, combine all the dry ingredients. Add the wet mixture to the dry and use a spatula to fold everything together until no dry flour remains. Don’t overmix
- 4. Scoops even spoonfuls of the cookie dough into round dome cookie shapes. Spread on the baking tray, leaving at least 2cm between each cookie.
- 5. Once the dough has chilled, bake it in the oven for 10-12 minutes until the outside is golden brown. Remove from the oven and allow the cookies to cool before removing. They will be very soft and firm up a bit as they cool.
