What’s your favourite meal-prep dish?
Well when I first adopted a plant-based diet, I batch-cooked variations of vegan pasta Bolognese on a weekly basis ( I’m pretty sure I’ve tried every single bottled Bolognese sauce in the supermarket 🙈)
It’s just one of the easiest & tastiest ways to pack in lots of nutrients from vegetables, plant protein and carbohydrates, not to mention it’s so freezer-friendly too.
Here is the recipe:
EASY VEGAN PASTA BOLOGNESE

Ingredients
- ✅ 100g of plant-based mince ( I used @flexiblefoodsau Italian mince )
- ✅ 2 cups of diced vegetables ( I used zucchini, button mushrooms, onion and capsicum)
- ✅ 1 cup water (or veggie stock)
- ✅ 400g x jar of Passata/Bolognese sauce
- ✅ 100g dried pasta of choice
- ✅ 1 tablespoon of oil
- *Optional: nutritional yeast or vegan cheese as a topping
Instructions
- 1. In a pan on medium heat, sautée the vegetables in oil for 5 mins until tender
- 2. Add in the mince, water and passata sauce. Bring to a boil then reduce the heal to a simmer. Stir occasionally for 10 minutes
- 3. In the meantime, cook the pasta according to packet instructions.
- 4. Serve the pasta with the sauce.
