Continuing on with my butter bean obsession, I decided to use it in a savoury recipe! This legit tastes like tuna in my opinion (just minus the fishy smell) so you NEED to try it!! 👌🏼
BUTTER BEAN “TUNA” SALAD SANDWICH

*Storage tips: store any leftover in an airtight container in the fridge for up to 2 days. The flavours get even better overnight.
Ingredients
- 1 tin butter beans, drained
- 4 tablespoons vegan mayonaise
- 1 tsp Dijon mustard
- 1/4 small red onion, diced
- 1 teaspoon maple syrup
- Salt & pepper to taste if needed
- Bread, lettuce, tomato, cucumber
Instructions
- 1. Add all the ingredients into a bowl and mash it together
- 2. Spread in on a slice of bread. Add some salad on top and slap on another piece of bread!
- Enjoy!
