Who loves muffins?! It’s so great to see so many people take up baking during this home quarantine time. Here is another easy and yummy recipe for you guys to try! I’m sure you guys will all be master bakers by the time the virus blows over.
FLUFFY LEMON BLUEBERRY MUFFINS

*Storage tips: in an airtight container at room temp for 2 days, in the fridge for a week or in the freezer for months!
Ingredients
- 1 1/2 cups self-raising flour
- 3/4 cup sugar
- 1/4 cup lemon juice
- 1/4 cup coconut oil, melted
- 1/2 cup soy milk (or other plant milk)
- 1/2 cup frozen blueberries
- Optional: 1 tablespoon corn starch for extra fluffiness
Instructions
- 1. Preheat the oven to 175 degrees Celsius, fanforced
- 2. Prepare a muffin tray with liners or oil spray. Alternatively I just used a silicone muffin tray
- 3. In a bowl, stir together the sugar, lemon juice, coconut oil and milk until the sugar dissolves.
- 4. Add in the flour and gently fold until no lumps remain
- 5. Gently stir through the blueberries
- 6. Divide the batter amongst the 6 holes.
- 7. Bake in the oven for 20-22mins until a knife inserted comes out clean
- 8. Allow the muffin to cool before removing from mould
