7-INGREDIENT PB RASPBERRY BROWNIE PROTEIN BAR

Nothing like a yummy homemade protein bar am I right? 

These bars pack a huge hit of peanut butter, chocolate and protein, with a slight tartness from raspberries to cut through the richness. If you love PB & Jelly, then you will LOVE this!

Here is the recipe: 

7-INGREDIENT PB RASPBERRY BROWNIE PROTEIN BAR

( gluten-free, no-bake, oil-free ) 

MAKES: 4 large bars 

INGREDIENTS:
Base:
  • 1/4 cup almond meal
  • 1/4 cup coconut flour
  • 1/4 cup vegan protein powder (I used @macr0mike salted vanilla )
  • 1 tablespoon water
  • 1 tablespoon maple syrup 
  • 2 tablespoons peanut butter (I used @byronbaypeanutbutter )
  • *Optional: Pinch of salt
Brownie layer 
  • 1/2 cup peanut butter ( I used @byronbaypeanutbutter )
  • 1/2 cup coconut flour 
  • 1/4 cup vegan protein powder 
  • 1/4 cup maple syrup 
  • 2 tablespoons cocoa powder 
  • 1/4 cup frozen raspberries 
Topping:
  • 90g chocolate (I used @pana_organic sixty ) 
  • 1 tablespoon vegan protein powder 
METHOD:
  1. Line a container with non-stick paper (mine was about 8 x 20cm) 
  2. Make the base: add all the ingredients for the base into a food processor and process until the mixture starts to clump together. Add extra dash of water if required. Transfer the mixture into the prepared container as an even layer and put into the freezer
  3. Make the brownie layer: add all ingredients except for the raspberries into the food processor and process until just combined. Add in the raspberries and blitz briefly just to mix it through. Transfer the brownie layer evenly over the base. Return to freezer.
  4. Melt the chocolate and stir in the protein powder until dissolved. Pour this layer evenly over the brownie layer. Return to freezer to set for 30 mins before slicing.
*Storage tips: in the freezer and allow to thaw at room temp for 2 minutes before serving
