Hola if you’re a fan of matcha!
For those who don’t know, matcha is finely ground up green tea. The word matcha itself literally translates to “powdered tea”. There are many health benefits to matcha but the main one would be that it’s packed with antioxidants! Matcha has been huge is Asia but it’s great to see it becoming more mainstream in western society too.
P.s. this cookie is made from oats so it’s basically acceptable as a breakfast 🤪

*Storage tips: at room temp for up to 3 days, in an airtight container in the fridge for a week or in the freezer for months
Ingredients
- 2 cups oat flour
- 1 teaspoon baking powder
- 1/3 cup coconut oil, melted
- 1/2 cup rice malt syrup
- 2 tablespoons matcha powder (or to taste)
- 1 tsp vanilla extract
- 50g vegan white chocolate, chopped
Instructions
- 1. In a bowl, cobimne all the ingredients until a thick cookie dough consistency
- 2. Pop the dough into the fridge for 30 minutes
- 3. Preheat the oven to 175 degrees. Line a large rectangular baking tray with non-stick paper
- 4. Divide the dough into 6 equal portions and form into cube/rectangular prism. Place them as far apart as possible on baking tray as they will spread as they bake.
- 5. Bake in the oven for 10-12 minutes until the edges are golden. Remove from the oven and allow the cookies to fully cool before serving.
