pumpkin white choc cookie dough

6-INGREDIENT WHITE CHOCOLATE PUMPKIN PROTEIN COOKIE DOUGH

Who else loves pumpkin in desserts?! Well I do and I’ve also been a bit cookie dough crazy lately so here is a yummy variation that you can try! I whipped this up using some leftover pumpkin I had and it was so tasty! 
Here is the recipe:
 
6-INGREDIENT WHITE CHOC PUMPKIN PROTEIN COOKIE DOUGH 
(gluten-free, oil-free, no-bake) 

INGREDIENTS:
  • 1 cup pumpkin puree ( I made mine fresh) 
  • 1 scoop (40g) vegan vanilla protein powder (I used @macr0mike salted vanilla) 
  • 1/4 cup coconut flour 
  • 1 tablespoon cashew butter 
  • 1 tablespoon maple syrup (or to taste)
  • Dash of water if needed 
  • 30g vegan white chocolate, chopped 
  • *Optional: dash of cinnamon 
METHOD:
  1. Add all ingredients except the white chocolate into a food processor 
  2. Blend until thick and smooth 
  3. Fold through the whites chocolate
  4. Transfer into a bowl and serve
