Who else loves pumpkin in desserts?! Well I do and I’ve also been a bit cookie dough crazy lately so here is a yummy variation that you can try! I whipped this up using some leftover pumpkin I had and it was so tasty!
Here is the recipe:
6-INGREDIENT WHITE CHOC PUMPKIN PROTEIN COOKIE DOUGH
(gluten-free, oil-free, no-bake)
INGREDIENTS:
(gluten-free, oil-free, no-bake)
INGREDIENTS:
- 1 cup pumpkin puree ( I made mine fresh)
- 1 scoop (40g) vegan vanilla protein powder (I used @macr0mike salted vanilla)
- 1/4 cup coconut flour
- 1 tablespoon cashew butter
- 1 tablespoon maple syrup (or to taste)
- Dash of water if needed
- 30g vegan white chocolate, chopped
- *Optional: dash of cinnamon
METHOD:
- Add all ingredients except the white chocolate into a food processor
- Blend until thick and smooth
- Fold through the whites chocolate
- Transfer into a bowl and serve
