Say hi to this magical combination of two of my favourite baked goods – cinnamon roll + banana bread!
This healthified loaf definitely does not skimp on flavour and is definitely very very addictive! I made this to share at a potluck and it was a huge hit.

Ingredients
- Banana bread:
- 1 1/2 cups self-raising flour
- 1/2 cup vegan vanilla protein powder
- 1/2 cup coconut sugar
- 4 large bananas, peeled (~400 g peeled weight)
- 2 tablespoons peanut butter
- 2 tablespoons water
Instructions
- 1. Preheat the oven to 160 ℃/ 325 ℉ and line a baking tin with non-stick paper
- 2. In a large bowl, combine the flour, protein powder and coconut sugar. Add the wet mixture to the dry and fold until a thick batter is formed.
- 3. In a blender, blend the bananas & peanut butter until pureed, pour out 1/4 of the banana puree into a bowl and set aside.
- 4. Pour the remaining 3/4 of the banana puree into the dry mixture. Add in the water and then gently fold the banana puree through the dry mixture until no lumps remain
- 5. Transfer the batter to the lined tin and bake in the oven for 35-40 minutes until a knife inserted comes out clean
- 6. Allow the loaf to cool completely before slicing
