6-INGREDIENT BLUEBERRY BANANA PROTEIN DONUTS

Blueberry muffins & banana bread were two of my fave cafe classics so I’ve combined both to create these donuts! These turned out super moist, so delicious, and the pops of blueberry provided awesome flavour and textural contrast. This would totally be delicious if you smeared some nut butter or melted some chocolate over it too! 

Here is the recipe:

6-INGREDIENT BLUEBERRY BANANA PROTEIN DONUTS 

MAKES: 6 donuts (per donut – cal: 210; P: 10g; C:36g: F: 3g ) 

INGREDIENTS:
Dry:
  • 1 1/2 cups of self-raising flour
  • 1/4 cup vegan vanilla protein powder 
  • 1/4 cup coconut sugar
  • 1/4 cup frozen blueberries 
Wet:
  • 3 ripe bananas
  • 2 tablespoons coconut oil, melted 
  • Dash of water if required 
METHOD:
1) Preheat the oven to 160 degrees Celsius
2) In a large bowl, mix together all the dry ingredients, except for the frozen blueberries 
3) In blender, blend together the wet ingredients until smooth
4) Fold the wet mixture into the dry ingredients to form a thick batter
5) Gently fold in the frozen blueberries
6) Divide the batter into the donut holes 
7) Bake the donuts in the oven for 15-20 min: until cooked
8) Remove from the oven and allow the donuts to cool down completely before removing from the mould & serving 
*Storage tips: in an airtight container in the fridge for up to 5 days or in the freezer for months.
