5-INGREDIENT VEGAN PROTEIN MARS BARS

Sharing another veganized chocolate bar recipe with you guys! Sweet creamy caramel with bitter dark chocolate is a match made in heaven. I’ve tried to keep it as simple as possible whilst using wholefoods to make it healthier. This was super delish and the perfect treat to have handy in the freezer!

Here is the recipe:

5-INGREDIENT PROTEIN MARS BAR 

(no-bake, oil-free, gluten-free*)

Makes: 4 large bars

Nougat base:
  • 1 cup oats (can use gluten-free oats) 
  • 1 scoop (40g) vegan caramel protein powder ( I used @macr0mike ) 
  • ¼ cup dates, pitted & soaked
  • 2 tablespoons almond butter
  • ¼ cup water
Caramel filling:
  • 2 cups dates, pitted & soaked
  • 2 tablespoons almond butter
  • ½ scoop (20g) vegan caramel protein powder
Choc coating:
  • 100g dark chocolate 
  • 1 tablespoon almond butter
METHOD:
1. Line a small container (mine was ~ 10 x 15cm) with non-stick paper
2. NOUGAT BASE: In a food processor, blitz the oats & protein powder until the oats are very fine. Add in the dates a blitz until a crumble forms. Add dates & water and process until the mixture forms a ball and sticks together. Transfer this into the lined container as an even layer and set aside in the freezer.
3. CARAMEL FILLING: in a food processor, blend the dates, almond butter and protein powder until a thick & smooth caramel forms. Transfer the caramel as an even layer over the base. Set in the freezer for at least 4 hours to allow the caramel to harden.
4. Remove the slice from the freezer and cut into logs. Melt the chocolate and almond butter until smooth. Coat the logs in chocolate and set in the freezer to harden.

**Storage: store the mars bar in the freezer and allow it to thaw at room temp for 5 mins before serving

This is a great healthified version of a traditional Mars bar and definitely did not last long in my house! Let me know if you try it 🙂
