Peanut butter + Jam = marriage made heaven! These balls have a super peanut-ty exterior and a pop of berry jam goodness when you bite into it! I whipped these up in my @magimix_australia food processor as a birthday gift my friend Liz and they received a big thumbs up! So if you’re PBJ crazy like me or my friend, then you will love these!
Here is the recipe:
5- INGREDIENT PBJ PROTEIN BALLS
(no-bake, oil-free, macro-friendly)
MAKES: 8 balls (Per ball- 170 cal, P: 9.5g, C:19, F: 6.5g. )
INGREDIENTS:

1 1/2 cup oats
-
1/4 cup vegan protein powder (I used @macr0mike PB cheesecake )

1/2 cup peanut butter (+ extra for drizzle)

1/4 cup maple syrup
-
1/4 cup water
-
1/4 cup strawberry jam
METHOD:
1. In a food processor, add in all the oats and protein power and blitz until the oats become a fine flour
2. Add in the peanut butter, maple syrup and water and process until the mixture clumps together like cookie dough
3. Divide the mixture into 8 portions, roll into a ball and flatten, the place a teaspoon of jam in the centre before moulding into ball shapes.
4. Freeze for at least 30 mins to firm up the protein balls
5. Complete with a drizzle of extr peanut butter
**Storage tips: in an airtight container in the fridge for up to 2 weeks or in the freezer for months
