This is a super easy & yummy treat to whip up and have handy in the freezer for when you want a healthy sweet treat. I have made a similar log-shaped variation of this before but its just so easy and so good that I had to do it again! Banana, peanut butter and chocolate… mm such classic & heavenly combo if you ask me.
Here is the recipe:
3-INGREDIENT PB BANANA TRUFFLE BITES
(gluten-free, oil-free, no-bake, macro-friendly)
MAKES: 6 bites (per bar – cal: 80, P: 3g F: 4g, C: 8g )
INGREDIENTS:
- 1 large ripe banana (*Tip: try to choose one that is straight for more even circles)
- 1/4 cup peanut butter
- 50g vegan dark chocolate
- *Optional: crushed peanuts for decoration
METHOD:
- Cut the banana into 12 evenly thick discs
- Spread the peanut butter evenly on half the discs of banana and then sandwich it with the other half of the discs banana
- Put in the freezer to set for a few hours until the peanut butter layer is solid
- Melt the dark chocolate in short bursts in the microwave, and roll the frozen bites in the chocolate to coat. Sprinkle the toppings on top before the chocolate coating sets.
- Store in the freezer and allow to thaw at room temp for a few mins before serving!
